An iconic venue in the region, long renowned for its rotisserie, the Moulin d’Assens reopens its doors on 14 January 2026 following a refurbishment that preserves the building’s character whilst breathing new life into it.

Passionate about their craft from a very young age, Head Chefs Claryce Monnier and Alexandre Lacoste have honed their skills – based on rigour and collaboration – whilst working at several renowned Michelin-starred restaurants in both France and Switzerland. After meeting at the Châteauvieux estate in Satigny, their careers took them to the hills above Montreux, where they honed their skills under Chef Stéphane Décotterd at Maison Décotterd in Glion.

Claryce and Alexandre champion a style of cooking where culinary traditions and innovation go hand in hand, and are committed to introducing you to fine ingredients, enhanced by their passion for the culinary arts.
